Lemon Shortbread

A simple recipe for everyone to enjoy. To serve with a dessert make biscuits smaller and thinner and reduce cooking time accordingly.

Serves: 12-15

Method

  1. Sift flour into a large bowl, then rub in the butter until the mixture resembles breadcrumbs, stir in sugar and lemon zest.
  2. Knead well to form a smooth dough.
  3. Roll the dough into a sausage shape approximately 7cm in diameter. Roll the dough in preserving sugar, wrap in cling wrap and chill until the dough is firm.
  4. Preheat oven to fan 150°C, conventional 170°C, gas 3.
  5. Grease a baking tray.
  6. Cut into slices just under 1cm in thickness.
  7. Bake for 30 minutes until pale and golden. In warm weather chill the shortbread before baking.

  • 250g McDougalls Plain Flour
  • 175g butter
  • 75g caster sugar
  • Grated zest of 1 large unwaxed lemon
  • Preserving or Demerara sugar for decoration
