Madeira Cake

In the nineteenth century cakes were often enjoyed with a glass of sweet wine, hence the creation of Madeira cake. Our delicious recipe can be enjoyed with an afternoon cup of tea.

Method

  1. Preheat oven to fan 160°C, conventional 180°C, gas 4.
  2. Grease and line the base of a deep 18cm cake tin with baking parchment.
  3. Sift the flour into a small bowl and set aside.
  4. Using an electric whisk, cream sugar and butter together until light and fluffy.
  5. Gradually add the beaten eggs and vanilla essence with a little of the flour, after each addition. Whisk in the remainder of the flour until all the ingredients are combined.
  6. Pour the mixture into the tin and level the surface.
  7. Bake for 1 hour until golden.
  8. Cool on a wire rack.

  • 225g McDougalls Supreme Sponge Flour
  • 150g caster sugar
  • 150g unsalted butter, softened
  • 3 medium eggs, beaten
  • 1 tsp vanilla essence
