Madeira Cake
In the nineteenth century cakes were often enjoyed with a glass of sweet wine, hence the creation of Madeira cake. Our delicious recipe can be enjoyed with an afternoon cup of tea.

Method
- Preheat oven to fan 160°C, conventional 180°C, gas 4.
- Grease and line the base of a deep 18cm cake tin with baking parchment.
- Sift the flour into a small bowl and set aside.
- Using an electric whisk, cream sugar and butter together until light and fluffy.
- Gradually add the beaten eggs and vanilla essence with a little of the flour, after each addition. Whisk in the remainder of the flour until all the ingredients are combined.
- Pour the mixture into the tin and level the surface.
- Bake for 1 hour until golden.
- Cool on a wire rack.
